EVENING STAR
Youthful, fruit driven wines, packaged under screw cap.
Mr David Pettavel’s efforts in the vineyard and wine cellar were of such success that expansion was constrained only by the shortage of experienced grape growers and winemakers. In order to combat the skilled labour shortage Mr Pettavel returned to Switzerland to recruit family and friends. The ship Evening Star docked in Port Philip harbour in 1856 carrying Mr David Pettavel and a cargo of grape growers and winemakers.

2007 EVENING STAR SAUVIGNON BLANC
Alcohol: 13.0%, Closure: Screw Cap
Our summer ripening season was warm and rain free in 2007, allowing the grapes to ripen evenly without dilution. The cool nights retained crisp natural acid and vibrant fruit flavours in the ripe grapes. Harvested at night, the grapes and juice were treated reductively throughout processing before being inoculated with a neutral yeast strain for fermentation at 13 degrees Celsius. Bottled early, capturing expressive youthful characters of perfumed green fruit flavours with hints of herbaceous complexity and a crisp mineral acid finish, the wine lingers with gooseberry and pear flavours. 2006 EVENING STAR RIESLING
Alcohol: 13.0%, Closure: Screw Cap
A long ripening period followed by night harvest, and cool fermentation has retained lifted elegant floral aromas and crisp citrus, apple and pear flavours finishing with a lingering mineral acid texture. Lively and crisp with a rich round palate this wine is suitable for immediate enjoyment or can be cellared for further complexity and enjoyment of mature Riesling characters.

2005 Evening Star Chardonnay
Alcohol: 13.5%, Closure: Screw Cap
Warm summer days and cool nights allow our Chardonnay grapes to retain vibrant and complex fruit flavours. After gentle pressing 35 percent of the juice was transferred to second fill French oak barrels for fermentation, the remaining juice was tank fermented to retain crisp youthful aromas and flavours. Upfront melon and peach flavours are enhanced with subtle oak characters and lingering tropical fruit with a citrus acid finish that ensures the wine will reward both immediate consumption or medium term cellaring |

2004 EVENING STAR CABERNET SAUVIGNON MERLOT
Alcohol: 14.0%, Closure: Screw Cap
Blend: Cabernet Sauvignon 65% Merlot 35%
Our Cabernet and Merlot grapes were fermented separately in open fermenters and pressed to French oak barrels. After six months maturation the first blend was assembled adding the soft ripe Merlot to the Cabernet Sauvignon to soften the wine and increase palate weight and fruit complexity. The wine was then returned to barrel for a further four months maturation. Deep cherry red in colour this wine displays cassis, ripe red plum, juicy red berry fruit and integrated oak characters. Suitable for immediate consumption or medium term cellaring. |

2005 EVENING STAR SHIRAZ
Alcohol: 14.0%, Closure: Screw Cap
Produced from grapes grown in our cooler Waurn Ponds vineyard, this Shiraz was crushed into open fermenters where heading down boards were utilised to ensure maximum extraction of colour and flavour. Pressed directly to French oak barrels, the wine was racked twice during the ten months barrel maturation before blending and bottling. This deeply coloured Shiraz displays intense aromas and flavours of spicy red berry fruits, ripe red plums and fragrant oak with a soft round palate. Suitable for immediate consumption or medium term cellaring. |

2006 EVENING STAR LATE HARVEST RIESLING 375ml
Alcohol: 9.5%, Closure: Screw Cap
A section of our Riesling vineyard was left to ripen until the end of summer, concentrating sugar and flavour. The dry season ensured the grapes ripened in perfect condition resulting in vibrant floral and ripe fruit characters. The golden grapes were hand harvested, sorted, gently pressed and cold settled before fermentation in four year old French oak barrels. Lively and crisp with fragrant perfumed aromas and flavours, the rich vibrant, sweet palate is balanced by crisp citrus acid texture on the finish, and lingering sweetness. Drink now with desserts, or cellar for increased complexity and richness. |
